The way we eat is changing in the US as more and more people make the transition to eating a diet made from whole, fresh foods. We are doing more cooking from scratch and are moving away from the standard American diet that includes 70% of factory packaged and processed foods. The reason for this switch is that more and more people are demanding to know exactly what is in the food that they are eating and are becoming more discerning about what they are putting into their bodies.

Late in 2014, I became single again and as I searched for recipes that were 1-2 servings I noticed that although there were some recipes, they were pretty hard to come by. And forget about finding recipes for soups and casseroles!

I also began talking to other singles and couples and realized that too often they were relying on processed, fast and restaurant foods….all of which are full of chemical additives, flavorings and colorings. These foods can definitely have a negative impact on your health. But of the singles and couples I talked to, many just found cooking from scratch too time consuming and overwhelming!
